At SEVRE ET BELLE, the principles of artisanal production are kept alive.
In the manufacture of dairy products, our cheese makers use the ladle "moulding" technique: the curds are collected using a ladle and placed in straining moulds. After two days the curds removed, the moulds having been turned over three times by hand.
The salting, maturing and packaging processes are carried out with the same meticulous precision.
The Dairy Industry
All operations in the cheese production process are subject to strict controls.
Our technicians are involved in all stages of the dairy production process, from the pasture to delivery at the dairy. They play an advisory role with breeders, ensuring that the milk remains biologically healthy. From animal nutrition to vacuum-tanker milking and storage--everything is analysed, monitored and checked by our own laboratories.
